Taco Cupcakes with Avocado


Taco Cupcakes

Why can’t cupcakes be a salty appetizer? These are great for a party or dinner with the family! When I saw these on curryandcomfort.yummly.com, I just had to share.

INGREDIENTS:

  • 1lb Lean ground meat (beef, chicken, pork or turkey)
  • 2 Jalapenos seeded and chopped
  • 1 Onion chopped
  • 2-3 Tbs store bought Taco seasoning (I used McCormick brand)
  • 1-2 tsp of Ground cumin
  • 1 tsp of Garlic powder
  • 1 tsp of Red chili flakes (or to taste)
  • Salt and Pepper to taste
  • 1 (15oz) can Diced tomatoes
  • 1 tub of 8 grands Biscuits
  • 1 cup Shredded cheddar or Mexican blend cheese
  • Avocado Frosting:
  • 1 ripe Avocado
  • 1/2 cup Cream cheese
  • 1/3 cup Sour cream
  • 1 tsp Lemon juice
  • 1/4 tsp Cumin powder
  • Salt and black pepper to taste
