My mom got a recipe from a neighbor 25 years ago that had Doritos and chicken and it was…WAIT FOR IT…. amazing!!!
Unfortunately, my mom lost the recipe (before the internet was booming) and we never had it again. Every couple of years I would Google Search, but couldn’t find it. TODAY is the first day of the rest of my life. I found it!
DORITOS CHICKEN CASSEROLE

11 ounces Nacho Cheese Doritos
3 cups cooked shredded chicken
1 can cream of chicken soup
1 can cream of mushroom
1 cup sour cream or *greek yogurt
2 cups of Taco shredded cheese or *reduce fat cheddar or mozzarella w/ some taco seasonings
1 can Ro*Tel tomatoes and chiles
1 tablespoon cumin
1 tablespoon chili powder
1/2 cup pico de gallo or salsa
Optional to Add:
1/2 cup of diced onions
2 cups of finely chopped spinach for some extra healthy goodness
1/4 cup of diced jalapenos
Preheat oven to 350 degrees.
In a medium bowl, stir together the chicken, soups, sour cream, half of the shredded cheddar, Ro*Tel, cumin, and chili powder and salsa.
Crush the Doritos and add half of the to the bottom of a 9×13 baking dish. Top with the chicken mixture. Bake for 25
Add the other half of the crushed Doritos over the top of the chicken.
Sprinkle the remaining cheese on top and bake for an additional 7-10 minutes till cheese is melted.
Remove from the oven and top with the pico de gallo. Let cool for 5 mins and serve.
